ORGANOLEPTIC NOTES


Bright straw yellow in color, with light greenish reflections, it is recognized and appreciated for its fresh, fruity and fragrant aroma, with elegant and intense references to fresh fruit and white flowers. Despite the typical lightness of the courteous, it is harmonious and full-bodied on the palate.

VINIFICATION AND AGING


The grapes are harvested manually during the month of September. After soft pressing, selected yeasts are inoculated (Saccaromices cerevisiae). Alcoholic fermentation is carried out at a temperature of about 18 ° C in temperature-controlled stainless steel tanks and cold stabilization takes place at the end of winter to avoid the formation of sediments. It is bottled in the spring following the harvest.

Bibliographic sources attest to the presence of this vine in various areas of Piedmont since the late nineteenth century, while today most of the production is concentrated in the municipalities of Capriata d’Orba, Francavilla Bisio and Gavi. Although it does not enjoy the same fame as the “noble reds” typical of our region, it is highly appreciated as an aperitif wine or a meal to accompany appetizers or light first courses.
