La Fenice, Barolo

TYPE

red wine with aging in cask

GRAPE VARIETAL

100% Uve Nebbiolo

ORGANOLEPTIC NOTES

Garnet red wine in which ruby nuances shine through, which over the years tend to orange. The nose consists of a bouquet of extraordinary complexity, elegance and intensity, exceptional richness, harmony and completeness. From the fragrance of violet, rose and other freshly picked fruits, typical of the product of the first months, we pass during the evolution following the universe of spices, where hints of vanilla, cinnamon and green pepper appear. In the flavor it turns out to be pleasantly dry, full, warm, robust, austere, but velvety, harmonious, ethereal, with a slight aftertaste of licorice and leather.

VINIFICATION AND AGING

The grapes are harvested manually towards the end of October. The vinification scrupulously follows the criteria of Barolo tradition and specification. Fermentation lasts about 20-25 days, at a controlled temperature of 27°C. To allow the wine to be enriched with the tannins and extracts necessary to form its noble and long-lived structure, in spring it is placed in large oak barrels, where it ages for at least two years. Subsequently, depending on the vintages, it is decided whether it should rest for another 12 months, or is ready for bottling. It finishes its aging in the bottle for about 6 months, before being put on the market.

La Fenice

Barolo

Wine obtained from a careful selection of the best bunches of Nebbiolo grapes matured in the vineyards in Pugnane and Bussia, between the towns of Barolo and Monforte. The soil is of morainic origin with dark clays mixed with white and sandy marls, which give the Nebbiolo grape characteristic and intense aromas combined with a lively ruby red color and an elegant structure.
