ORGANOLEPTIC NOTES
Ruby red rich in nuances tending to garnet. The aromatic persistence is engaging. From the surprising delicacy of the bouquet you can recognize oriental spices such as cumin, cardamom and pepper. Warm on the palate, of exceptional balance and softness and of long aromatic persistence.
VINIFICATION AND AGING
The grapes are harvested directly in small crates, stacked on pallets exposed in the best ventilated areas: it is here that the grapes wither thanks to the autumn breezes and remain until the end of the harvest. It is then destemmed by hand and softly pressed. Fermentation in contact with the skins lasts 18/20 days, at a temperature of 15-18 ° C., with daily coots. Malolactic fermentation takes place during the aging period, a minimum of 30 months long, directly in the barriques where the wine has been planted. After aging in wood, it rests in the bottle for at least 6 months before being placed on the market.

Genesis, whose etymology means creation, is the name we wanted to give to this wine, since Genesis represents the most daring and original intellectual play produced in our land.

Ruchè di Castagnole Monferrato
Rare wine, obtained from a careful selection of Ruchè grapes, left to dry for about 3 weeks. Vinified in wooden barrels and aged in Tonneaux for three years, it is offered to the consumer after more than four years from the harvest, bringing exciting sensations. Genesis will stimulate the imagination of the expert taster, to whom it will highlight the extraordinary breadth of taste-olfactory sensations.
