ORGANOLEPTIC NOTES


Wine of large structure, with tannic density and fruit well above average. Ruby in color, tending to purplish, it is rich in enveloping and velvety aromas, with hints of brown cherries and vanilla.

VINIFICATION AND AGING


Destemming and soft pressing of the grapes, with low sulfur dioxide content. Fermentation in contact with the skins for 14/16 days, at a temperature of 28-30°C with daily phosphates. Malolactic fermentation in stainless steel tanks. The wine ages in 225-liter oak barrels, for a minimum of 18 months.

Ottima come accompagnamento a un cucina saporita e sostanziosa, ben si sposa con primi piatti a base di pasta o riso e tutti i tipi di carne, cucinati alla griglia, arrosti o stufati.

CURIOSITY


Fin da piccolo, quando andavo in paese, mi sentivo chiamare “Cavalé”, un’espressione dialettale, che indicava il mio cognome, pronunciato in piemontese.

The careful selection of the grapes guarantees the production of a wine with a broad structure, with a tannic and fruity density that is decidedly above average. With a Russian ruby color, rich in nuances tending to garnet, it is warm and soft on the palate, while the nose is velvety in aromas, with hints of vanilla and cherries. Definitely a wine for special occasions!
