GENERAL DESCRIPTION. A superb red wine made from a sapient selection of Barbera, Cabernet Sauvignon and Nebbiolo grapes grown in vineyards enjoying ideal exposure and soil composition. The Barbera brings to the wine structure and a austere leanness, the Nebbiolo longevity and elegance, and the Cabernet roundedness and smoothness, all then assembled from their hand-split oak casks into the final wine. It is remarkable how each variety preserves its own distinguishing characteristics, bringing with it fragrances and flavours superbly integrated. A lovely wine to be sipped meditatively.
SENSORY PROFILE. Monterovere vaunts a refined, glossy structure, enriched by hints of sweet oak and well-ripened fruit that envelop the palate, conveying a subtle sweetness perceptible on the nose as well, where the individual grapes’ varietal qualities lusciously meld together, along with scents of vanilla.
VINIFICATION AND MATURATION. While the clusters are de-stemmed and gently pressed, very little SO2 is utilized. The must ferments on the skins at 28-30°C for 14-16 days, with daily punchdowns, then the wine goes through malolactic in stainless steel tanks. It matures in 225-litre oak barrels for a minimum of 18 months.
